Ingredients

  • 10 eggs
  • 2 carrots
  • 1 clove garlic
  • 1/4 cup sour cream or plain yogurt
  • 1 teaspoon salt
  • dash pepper
  • 1 teaspoon parsley
  • 1/2 teaspoon oregano
  • 1/2 teaspoon basil
  • 1/2-1 cup shredded cheddar optional

Instructions

  • Preheat greased skillet over medium heat.
  • Roughly chop the carrot and place in the blender with the remainder of the veggies.
  • Pulse until small chunks remain.
  • Add the eggs and sour cream and puree.
  • Pour into the skillet and add herbs and cheese.
  • Cook until eggs are desired cooked-ness, stirring frequently to prevent burning.
