Butter Almond Drop Cookies
These easy cookies are delicious on their own, but even more yummy dipped in chocolate!

- 1 cup butter softened
- 1 egg
- 1/2 cup maple syrup
- 2 cups almond flour
- 1/2 cup coconut flour
- 1/4 teaspoon salt
- 1 teaspoon vanilla
- Homemade Chocolate Sauce for dipping cookies
- 1/2 cup coconut oil
- 2 tablespoons raw cacao powder
- 2 tablespoons raw honey
Preheat oven to 375° F.
Beat the butter and egg in a stand mixer or with a handheld mixer. Add the rest of the ingredients and mix on medium speed until fully incorporated.
Drop by rounded teaspoonfuls on a cookie sheet and bake at 375° F for 8 minutes. Transfer to wire rack to cool.
Make chocolate sauce: mix all ingredients together thoroughly. Place a piece of waxed or parchment paper on a cookie sheet.
Once cookies have cooled, pour chocolate sauce onto a small shallow plate. Push the cookie down into the chocolate so the bottom is covered. Remove it from the chocolate and place it on a piece of waxed or parchment paper. Once all your cookies are dipped you can place the cookies in the fridge to solidify the chocolate more quickly.
Remove from waxed or parchment paper, and enjoy!
