Butter Almond Drop Cookies

These easy cookies are delicious on their own, but even more yummy dipped in chocolate!

Ingredients

  • 1 cup butter softened
  • 1 egg
  • 1/2 cup maple syrup
  • 2 cups almond flour
  • 1/2 cup coconut flour
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla
  • Homemade Chocolate Sauce for dipping cookies
  • 1/2 cup coconut oil
  • 2 tablespoons raw cacao powder
  • 2 tablespoons raw honey

Instructions

  • Preheat oven to 375° F.
  • Beat the butter and egg in a stand mixer or with a handheld mixer. Add the rest of the ingredients and mix on medium speed until fully incorporated.
  • Drop by rounded teaspoonfuls on a cookie sheet and bake at 375° F for 8 minutes. Transfer to wire rack to cool.
  • Make chocolate sauce: mix all ingredients together thoroughly.
  • Place a piece of waxed or parchment paper on a cookie sheet.
  • Once cookies have cooled, pour chocolate sauce onto a small shallow plate. Push the cookie down into the chocolate so the bottom is covered. Remove it from the chocolate and place it on a piece of waxed or parchment paper. Once all your cookies are dipped you can place the cookies in the fridge to solidify the chocolate more quickly.
  • Remove from waxed or parchment paper, and enjoy!
