- 5-6 fillets of fish I like to use flounder or hake
- salt & pepper to taste
- 1/4 cup butter or ghee
- 1 tablespoon minced garlic about 3 cloves
- 2 tablespoons lemon juice about 1/2 a lemon
- 1/2 teaspoon lemon zest about 1 lemon
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1 teaspoon parsley
Preheat oven to 425° F.
Arrange fish on jellyroll pan (a cookie sheet with sides) and sprinkle with salt and pepper.
In small saucepan, melt butter over medium heat.
When butter is melted stir in garlic. Let sizzle a minute or two until fragrant, then turn off the heat and add in remaining ingredients.
Spoon sauce over fish (about 1 1/2 tablespoons per fillet) and bake for 10 minutes, or until flakey.
Serve hot, with leftover sauce for drizzling.
