- 10 eggs
- 2 carrots
- 1 clove garlic
- 1/4 cup sour cream or plain yogurt
- 1 teaspoon salt
- dash pepper
- 1 teaspoon parsley
- 1/2 teaspoon oregano
- 1/2 teaspoon basil
- 1/2-1 cup shredded cheddar optional
Preheat greased skillet over medium heat.
Roughly chop the carrot and place in the blender with the remainder of the veggies.
Pulse until small chunks remain.
Add the eggs and sour cream and puree.
Pour into the skillet and add herbs and cheese.
Cook until eggs are desired cooked-ness, stirring frequently to prevent burning.
