Strawberry Coconut Popsicles

These easy-to-prep popsicles are loaded with nutrition, but so yummy your kids won't even know they're getting a health food. ;) Keep them in the freezer for summer snacking, or even an easy breakfast.

  • 10 strawberries frozen or fresh
  • 12 ounces full fat coconut milk
  • 2-4 tablespoons honey to taste; may also substitute stevia drops or other sugar-free sweetener to taste.
  • 1 teaspoon vanilla
  • 1/4 teaspoon magnesium powder


  • Puree all ingredients in blender or food processor, pour into popsicle molds, and freeze until set (a few hours).
