- 12 ounce frozen riced cauliflower
- 2 pounds ground beef
- 1 medium onion chopped
- 15 ounce tomato sauce
- 1 teaspoon ground cumin
- 1/2 teaspoon garlic powder
- 2 teaspoons chili powder
- 2 teaspoons salt
- 1/2 teaspoon black pepper
- 1/2 cup sour cream
- 1/2 cup ricotta or cottage cheese
- 1 cup Monterey jack cheese shredded
- 3 large eggs
- 2 cups sharp cheddar cheese shredded
- 2 green onions sliced
Preheat oven to 350 degrees and prepare a 9x13 casserole dish with nonstick cooking spray.
Place riced cauliflower in a microwave-safe container and microwave for 4 to 5 minutes until tender.
Drain cauliflower to remove excess moisture. Place in an even layer on the bottom of casserole dish.
In a large skillet, cook ground beef with onions over medium-high heat. Cook until browned and crumbled. Drain well and return to skillet.
In your skillet, add tomato sauce, cumin, chili powder, garlic powder, salt and black pepper to your ground beef. Stir to blend and heat until bubbling.
In a medium bowl, beat eggs slightly. Add sour cream, cottage cheese, and Monterey jack cheese. Stir to blend. Spread in an even layer over cauliflower.
Spread the ground beef mixture on top of the cheesy layer and cover with shredded cheddar cheese.
Bake for 30 minutes or until the cheese on top has melted and edges are bubbly.
Top with sliced green onions and serve.
