Creamy Parmesan Coleslaw

This creamy, crunchy coleslaw is brightly colored and full of nutritious, delicious ingredients. Even if you don't love cabbage, give this a try!

- 1/2 large head of cabbage thinly sliced or shredded
- 3 carrots shredded
- 1 cucumber thinly diced
- 1 teaspoon kosher or sea salt
- 1/2 cup mayonnaise ideally homemade
- 1/4 cup sour cream
- 1 tablespoon kombucha or apple cider vinegar, or white vinegar
- 1/4 teaspoon pepper
- 1 teaspoon parsley
- 1/4 cup Parmesan cheese
Combine veggies in a large bowl and sprinkle with salt.
Stir and let set while combining dressing.
Stir together mayo and sour cream until creamy.
Add in remaining ingredients and stir until well mixed.
Stir into salad.
Store leftovers in the fridge in a covered container.
