This creamy, crunchy coleslaw is brightly colored and full of nutritious, delicious ingredients. Even if you don't love cabbage, give this a try!

Ingredients

  • 1/2 large head of cabbage thinly sliced or shredded
  • 3 carrots shredded
  • 1 cucumber thinly diced
  • 1 teaspoon kosher or sea salt
  • 1/2 cup mayonnaise ideally homemade
  • 1/4 cup sour cream
  • 1 tablespoon kombucha or apple cider vinegar, or white vinegar
  • 1/4 teaspoon pepper
  • 1 teaspoon parsley
  • 1/4 cup Parmesan cheese

Instructions

  • Combine veggies in a large bowl and sprinkle with salt.
  • Stir and let set while combining dressing.
  • Stir together mayo and sour cream until creamy.
  • Add in remaining ingredients and stir until well mixed.
  • Stir into salad.
  • Store leftovers in the fridge in a covered container.
