Tastier Broccoli Cheese Soup (with Bacon!)

With bacon, cream cheese, and heavy cream, this broccoli cheese soup is perfect for a ketogenic diet. But, if you're not keto, don't worry. This soup is great for anyone looking for a healthy, warm comfort food.

- 1 stick butter from grass-fed cows
- 1 clove garlic
- 1 small onion chopped finely
- 16 ounces cream cheese, softened
- 6 cups bone broth
- 2-3 bunches broccoli, chopped
- 2 cups heavy cream
- 16 ounces mild cheddar I used Grass Point Farms
- 16 ounces aged cheddar I used Kerry Gold
- 1 pound bacon, cooked and crumbled
Melt butter in a large pan.
Sauté the garlic and chopped onion in the butter.
Add the cream cheese and broth to the pan. Stir until the cream cheese is fully melted.
Add the broccoli. Cover the pan and let simmer until broccoli is tender.
Finish the soup off by adding the heavy cream, cheeses, and bacon. Cook over medium-low heat until warmed through.
Notes:
Season to taste! Cheese and bacon are salty on their own, but if you want more salt, pepper, or other seasonings, go for it.
Start cooking the bacon in the oven before you begin chopping and cooking the onions. By the time you're ready to add the bacon, it will be cooked.
You can use frozen broccoli instead of fresh. Thaw it for a few minutes in the microwave (not fully cooked) so you can chop it smaller.
Feel free to use your family's favorite cheeses.
If your family is smaller, you can easily halve the recipe.
