- 6 eggs
- 2 bananas very ripe is best
- 1/2 to 1 teaspoons vanilla extract
- 1 to 2 tablespoons coconut oil
- Nuts to garnish optional
Mash the bananas with a fork in a bowl.
Add eggs and vanilla and beat together until well mixed.
Heat coconut oil over medium heat.
Add egg mixture and cook like scrambled eggs.
