Ingredients

  • 6 eggs
  • 2 bananas very ripe is best
  • 1/2 to 1 teaspoons vanilla extract
  • 1 to 2 tablespoons coconut oil
  • Nuts to garnish optional

Instructions

  • Mash the bananas with a fork in a bowl.
  • Add eggs and vanilla and beat together until well mixed.
  • Heat coconut oil over medium heat.
  • Add egg mixture and cook like scrambled eggs.
