My weakness when it comes to candy and sweets is totally chocolate and peanut butter. Sometimes though, I get a craving for chocolate and mint.
There is something refreshing about the mint flavor mixed with chocolate.
It can get tough when trying to stay away from sugar to get your chocolate fix in.
I finally got brave and started trying to make sweet treats at home using sweeteners that don’t make an impact on your blood sugar levels. (Did you know that maintaining blood sugar levels is key to adrenal and thyroid health?)
I like to have variety in the house because each seems to have it’s place when you are baking or creating desserts.
An easy way to start using alternative sweeteners are to make shakes and smoothies. They are so forgiving because you can add a little at a time until you get the right amount.
It’s hard to fix a baked treat once it’s cooked.
Another tip when working with other sweeteners is to add a pinch of salt, it helps deepen the flavor.
With this shake, add a touch of sweetener, taste and add until it is sweet enough for you. It’s always better to start out with less. I like mine on the darker side so I can really taste the mocha mint flavor with the coffee.
1/4 cup heavy cream
1/2 cup brewed coffee
1 cup spinach (optional)
1/4 tsp. vanilla extract
1/2 tsp. mint extract
1 1/2 tbsp. of cocoa powder
1-2 pinches of sea salt
1 tbsp. gelatin
1/8-1/4 stevia. (Taste as you go, all stevias are NOT the same)
4-5 ice cubes
- Throw everything into a blender and blend until smooth.
- Taste to check how sweet it is and add more if needed.
I love this shake for an afternoon boost. I don’t need to feel guilty either because it is sugar free and packed with the nutrients from the spinach and gelatin.
